Eating a slice of your wedding cake on your 1st Anniversary is a lovely tradition and a cute idea. But if you think about it, you're eating something that is a year old! Not to worry, there are steps you can take to make sure that year-old cake is preserved as best as possible.

Heartier flavors such as chocolates, carrot cake and banana will withstand the test of time better than cakes with fresh fruit fillings and whipped cream or buttercream. Many bakers will only recommend saving cakes for up to three months because of freshness concerns. But eating a cake which was frozen for a year won't hurt you - if anything it will just taste a bit stale.

In case you're a do-it-yourself bride or are having something trendy such as a backyard barbecue, you may want to know how to preserve and save the top tier of your wedding cake yourself. However if your reception is being catered, your local baker, caterer or reception hall more than likely has experience in saving the top tiers of wedding cake.

Steps To Preserve The Top Tier Of Your Wedding Cake

  1. Remove all non-edible decorations, like flowers and place the unwrapped slice or tier in the freezer for a few hours until the icing hardens. If the cake is iced with fondant skip this step.
  2. Wrap in several layers of plastic wrap then in foil.
  3. Put it in a plastic bag and then squeeze the air out. You want to protect your cake from freezer burn, so it is very important it is wrapped well and there is no air in the bag.
  4. Place the bag in a cake box or a plastic container and freeze it.
  5. Remove it from the freezer a 1-3 days before your anniversary if it's the entire tier and place it in the refrigerator to defrost. A small slice of cake may defrost overnight.
  6. Dig in and enjoy!

Tips To Keep Your Wedding Cake at Maximum Freshness

  1. Ask your caterer to set the top tier aside at your wedding so that it isn't cut or accidentally served. It is better to preserve if the entire tier is kept intact.
  2. Make sure the caterer chills the top tier of the cake immediately after the cake ceremony so that the icing will harden.
  3. Once it hardens have them wrap the tier in several layers of plastic wrap. (Tin foil can cause freezer burn).
  4. Seal the cake in an airtight freezer bag. You may choose to then put it in a wedding cake box for transport and for memories. If it is in a beautiful box in your freezer you'll also know exactly what it is and won't accidentally defrost it sooner.
  5. When the time arrives, thaw the cake in the fridge for a few hours to overnight before digging in. And don't forget to break out your wedding toasting flutes for a champagne toast while you eat your cake!
